This recipe is based on a delicious Italian sauce called Pizzaiola. Pizzaiola is a tomato-based sauce that is simply delicious. It originated in Italy, where it was traditionally served over steak. This recipe uses sirloin steak, but if you prefer to use a cheaper cut of meat, like flank steak or skirt steak, reduce the cooking time accordingly.

Ingredients and Directions for Steak Pizzaiola Using Chuck Steaks

Ingredients

1 ¼ pound boneless sirloin steak, trimmed of fat 

salt to taste 

2 tbsp olive oil 

4 med cloves garlic, smashed 

1 lg onion, sliced ¼ inch thick 

2 bell peppers, sliced ½ inch thick 

4 pepperoncini (jarred), drained and sliced thinly 

1 can crushed tomatoes (15-ounces) 
½ tsp dried oregano 

Red pepper flakes to taste 

2 tbsp chopped fresh parsley 
Directions

1. Season chuck steaks with salt and pepper to taste. Preheat a large skillet over medium-high heat.

2. Add the chuck steak to the pan and sear it on both sides, about two minutes each. Transfer the steak to a plate. 

3. Add the garlic to the skillet. Add in the onion and bell peppers. Cook for about 4 minutes, stirring occasionally. They should soften.

4. Add in the ¾ cup of water, pepperoncini, oregano, tomatoes, red pepper flakes. Stir well. 

5. Bring the mixture to a rapid simmer. Place the steak back into the pan.

6. Simmer for about 7 minutes, turning the steak once. The meat should be medium rare. 

7. Remove the steak from the pan and place on a cutting board or plate.

8. Rest for 5 minutes before cutting. Simmer the sauce for an additional 3 minutes to allow it to thicken. 

9. Slice the steak against the grain, and into thin slices. Divide it among plates. Before serving, top it with the sauce and some fresh parsley. 

10. Serve with your choice of focaccia bread, pasta, fried peppers, fried mushrooms, crostini, bruschetta, or Italian toast.
