Peppercorn steak has a wonderful, upscale flavor that feels like an expensive night out with your family. The good news is it is easy to make at home, and relatively inexpensive as well. For this recipe, we recommend that you season your steaks ahead of time and place them in the refrigerator to allow the seasoning to penetrate the Top Sirloins better. You can also marinate your steaks before seasoning to customize the flavor of your meal. 

Ingredients and Directions for Top Sirloin Steaks with Peppercorn Sauce

Ingredients

4 top sirloin steaks (6 to 8 ounces each) 

½ package of au jus mix (approximately 1 ounce) 

2 tbsp margarine 

2 ½ tbsp flour (all-purpose) 

1 cup heavy cream 
1  1/2 tbsp coarse black pepper (or more to taste) 

2 ounces brandy 
Directions

1. Preheat your grill to medium. Season the Top Sirloins to taste on both sides. 

2. Grill Top Sirloins to the desired doneness. 

3. Bring water to a boil in a medium saucepan. Add the packet of as jus mix and stir well with a whisk.

4. Add the brandy. Boil for about 10 minutes. 

5. Meanwhile, in a small saucepan, mix the margarine and flour to make a roux. Cook the roux for 5 minutes to remove the raw flour flavor.

6. Add the finished roux to the au jus mixture and mix well with a wire whisk. The desired result is a smooth gravy-like consistency. 

Stir in the heavy cream, and salt and pepper to taste. Place the Top Sirloins on a serving plate and drizzle the au jus sauce over them evenly.
