Good marbling, we agree with USDA Prime grade.
Excessive inedible fat, even by Ribeye standards.
Very thin steak. We took ours off the grill at 110 degrees and let it rest 15 minutes.
Plated. Topped with Mushrooms, over Sauteed Fingerling Potatoes and String Beans. In the end, the flavor and dining experience didn't live up to the pedigree.
USDA Prime Filet Mignon - Complete Trim - 8 oz. $42.50 each. This is an expensive steak, and we felt the trim didn't live up to expectations.

The steak starts falling apart on the grill.
The rich beef flavor was there, it tasted very good.
We did not think it was a good value at $42. Shown plated with Quinoa and Multi-Colored Carrot Slices.
USDA Prime NY STRIP 10 oz. $35 each
The marbling looked a little less than the other prime steaks.
But we thought they much better. These were at the high-end of our value price limit.
The NY Strips had something The Ribeye and the Filet Mignon didn't.
Amazing juicy flavor! Which is why we order these again.
Plated with Garlic Mashed Potatoes and Brussels Sprouts, an excellent meal.

Good Marbling for a USDA Choice Steak
The Filet Mignon has to be 1.25 Inches at its Thickest Point to be a Porterhouse. This is a Good Cut.
