This is just some of the criteria we use to review the products you will see here. We will also mention services such as ease of website operation, use of promotional coupons, and the company's customer service, if it applies. 
Writing detailed steak reviews may sound like a lot of fun, and it is for us, but it is also a lot of work. When we target a company or product to review we don't buy just one steak, out of respect to the company we are buying from, we purchase many to get a fair analysis. No food service would want their review to be solely based on one steak. Providing you with these reviews is an expensive labor of love.

Our goal is to recreate the customer experience as best as we can so that you will know exactly what you should expect from your order, provided this is the service that best suits your needs, tastes, and budget. You will be spending much more than what you would spend buying steaks locally, and you are not picking out what you are buying. There is a lot of "consumer trust" that comes with buying steaks online and we want to make sure you get the most value for your money.

How We Review Steaks

The chef running a shift at a restaurant is normally also the "expeditor," meaning the person to looks over every plat of food for proper ingredients, presentation, cooking temperatures to ensure they meet up to the quality standards of the restaurant. You can think of us reviewing steaks in the same light. Here are some, but not necessarily all of the boxes we would check for any product review:
    • Website - Is the company's website easy to navigate, find what you are looking you are looking for, take coupons, etc. 
    • Shipping - If the shipment was for fresh meat, did it arrive cold? If it was frozen, were the products shipped on dry ice and are still as hard as a rock. 
    • Packaging - Were the products packaged in a way they were protected from bumps and bruises of shipping without getting any cracks. Is the vacuum sealed film thick or cheaply thin?
    • Defrosting - We follow the company's guidelines for defrosting and test the amount of time it took.
    • Leaking - Leaking packaging can make a huge mess in a refrigerator and be quite an inconvenience to work with in the kitchen. If the company doesn't save a few bucks on cheap vacuum packaging there should not be a problem.
    • Product Inspection. We check the steak for health, (smell or spots) the trim for excessive fat, the cut to make sure it is what it said it was on the website, and look for silver skin that might have to be removed. Basically, that you received what you paid for.
    • Preparation - How a steak is prepared or cooked is your responsibility more than the company you purchased it from, except in the case of marinated or glazed meat. 
    • Flavor, Texture, and Tenderness - We also refer to this "mouthfeel." Your steak should check all the boxes of a gourmet experience worthy of the price you paid for it. This is our opinion.
    • Plated - We see how other diners, mainly our guests, are enjoying their experience as a full meal. As a result, we will pair an amazing gourmet steak with inappropriate sides and vegetable. We will complement the entree and elevate it as the star of the show. We don't necessarily ask for feedback, we can see it in their eyes and their facial expressions. Most guests will provide unsolicited feedback.
    • Value - Would we buy this product again at the same price? We might for personal use, and not for entertaining. We might pay more. Basically a summary of our experience. 

    • Customer Service - Was there a need for us to contact the company's customer service, and did they make us happy customers.
    • Photography - We don't consider ourselves professional photographers, but we do our best to show you everything we experienced from start to finish reviewing steaks. Not only is a picture worth a thousand words, but it is impossible for us to say a steak is really great, if the picture showed something off-color improperly harvested or butchered. Our photos also provide you with preparation insights, which you may want to follow at home.
    • Unique Expert Copywriting - If you haven't guessed already, you will find this website is far different than other review websites that might give you 150 words about a great steak company, which by the way, they happen to have a financial affiliation with. Our reviews are exactly how we feel about the product, company, and the service they provide. 
    • Video - We also tend to shoot video, although we don't use it much on the website. In the future, video may be used to share with you how we prepare and cook a steak. They are not recipes as much as they are techniques that we have evolved over the years. We do send out emails when we add one to the website, so there is another to join our mailing list. When you are buying steaks of this high quality, it is best to do as little as possible and not ruin them.
