Dry-Aged 50 Days USDA Prime Black Angus Boneless NY Strip Steak, Center Cut, 1.5 inches thick 12-15 oz. We bought ten of them on sale.
Look at the amazing marbling and the perfect trim.
Pan-seared in a cast iron pan
We let the steaks cool, then finished them in a convection oven, elevated so the air can cook the steaks in every direction.
Letting the steaks cooks between the pan sear and oven finish gives you a steak with an all-pink inside.
Served with Garlec Mashed Potatoes and Sugar Snap Peas. Melt-in-your-mouth delicious!

We decided to remove some fat and silver skin.
This is more of a personal choice then right or wrong, but we feel the trimming is better at their website.
They grilled up perfectly, here we are letting them rest.

We are using a converted Weber grill to smoke these. We are using apple and pecan wood.
Very meaty ribs done smoking. The will braise for a few hours and go back on the grill for sauce.
And they finish like this. About ten hours to make and about ten minutes to see them disappear!
